So, I wanted to start this year off right and start working out more consistently and eat a bit healthier. Don’t get me wrong, I’ve already done a great job of going to the gym and eating healthy because that’s just “my thing” and all but I wanted to take it to the next level. I wanted to set a goal to work out every day this year and by work out everyday, I mean get off my butt and move everyday. Whether that be a pilates class (Shout out to Cassie, the maker of Blogilates!) or just dance around the house to my favorite song!

Also, I wanted to eat better foods while keeping a tight budget, which is what I wanted to emphasize on today. It is important for me to cook meals that are cheap and easy to make and also good for the body and soul! Since I have a full time job, I need to make sure that what I’m cooking will last the full week. Doing this will make sure you don’t fall off the health train and just grab something quick, such as fast food. I know I’m not the only one who is obsessed with their crock pot but this the one reason why I love it, for the convenience! I usually prepare all of my meals on Sunday and they are ready for me the next day to take to work.

During the cooler months, I like to make a variety of soups. Sometimes I get my ideas from an app. called Pinterest (if you have not downloaded this, go do so now!). It’s great for searching healthy meal plans and ideas! One recipe I’ve made is a sweet potato, butternut squash soup in my crock pot! It’s sweet, smokey and of course healthy. I actually wanted to try out a new recipe that is similar but still has the same feel so I came up with a butternut squash, persimmon soup. I decided on persimmons because I picked some up on my last trip to the farmers market and they were only $0.39!! So without further ado, here is the recipe:

  • 1 butternut squash
  • 1 persimmon
  • turmeric (1 tbsp)
  • red pepper flakes (just a pinch)
  • salt (to taste)
  • 1 can of coconut milk
  • nutritional yeast (makes soup more cheesy)
  • 1 bouillon cube (I used chicken flavor)

Put all of these ingredients in your crock pot, turn it on high, stir occasionally and it should be ready for you the next day! Easy, tasty & cheap as hell lol. Hope you guys enjoy it as much as I did!
