I love finding new, exciting and healthy recipes to try out and let’s face it I’m not rolling in dough either so I need my meals to be on the cheaper side! There’s one recipe that stands out and that I’ve been making for years; eggplant pizza. It’s easy to make, requires ingredients that are fairly cheap and it’s absolutely delicious! Here is the recipe:

-eggplant (cut in ¾” slices)
-tomato sauce
-shredded cheese
-toppings (i used turkey pepperoni)
-olive oil
-seasoning (salt, pepper, oregano, cayenne, fresh garlic, etc.)

First, I cut the eggplant into ¾” slices, coated them in olive oil and applied salt & pepper. I placed them in the oven for 20 minutes on high 370 degrees. While the eggplant is roasting, make the sauce. I used a can of tomato sauce and added my own seasonings such as fresh garlic, cayenne, salt, etc. and warmed this up on the stove. After roasting the eggplant slices, I topped them with the sauce, cheese and turkey pepperoni. I then broiled them in the oven for 5 minutes to get everything nice and melted!

The results tasted delicious! The only thing I would try to perfect next time is making them more sturdy because it broke apart as soon as I bit into it. Overall, I would definitely try this recipe again because it’s a great, healthy alternative to everyone’s favorite food, pizza! Go try it for yourself
