If you’re like me and crave sweets every day of the week and can’t do without it, this recipe is for you! I’ve always been a “sweets” kinda girl and had to figure out a way that I could fulfill this craving and also continue to meet my fitness goals. I went through tons of recipes in the past that never quite stuck with me (either too high calorie or got boring after some time) so I turned to some of my favorite fitness influencers to find out what types of desserts ideas they have shared and recommend. One of the recipes that stuck out the most was this microwave “mug” cake that Brix Fitness made when he encountered his cravings. I tried it for the first time a few weeks ago and have to admit, I now make it at least five times a week; it’s delicious! So, without further ado, here is the protein power cake recipe:

You will need:

Cake mixture:

  • 50 grams pumpkin puree
  • 10 grams kodiac waffle/pancake mix (whichever flavor is fine, I use dark chocolate)
  • 25 grams protein powder (I use vanilla flavor but you can use what you have in your stash)
  • 10 grams peanut butter
  • Splash of water
  • 2 tbsp. chocolate chips

Topping:

  • 2 tbsp. whipped cream
  • Your favorite flavor of Halo Top/Enlightened protein ice cream

 

 After you place all of these ingredients in a mug/bowl, you will need to stir it up until it creates a “cake batter” like texture (Great, now I’m craving cake batter smh).

After this, stick it in the microwave for one minute and a half and let it sit for about 5 minutes to cool.

Next, assuming you’ve already defrosted/softened your ice cream before this, (Halo Top recommends that you let the container sit out for a few minutes before devouring to add to the deliciousness) you scoop about a fourth of the pint of ice cream on top (sometimes, I do one third!) of the cake and add 2 tablespoons of whipped cream on top and that’s it! Simple & Delicious!!
