Southern "biscuit-style" Strawberry Shortcake

Have you ever bought bananas with the intent of eating them all but are left with a couple that over ripen? Well, if the answer is yes, this is a great recipe to try! I usually make banana bread whenever I have 2-3 bananas that just sit in my fruit bowl and get no love. It’s easy to make and requires very little ingredients. Here is the recipe:

  • 2-3 ripe bananas
  • 1 tsp. baking powder
  • 1/3 cup melted butter
  • chocolate chips
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 cup sugar (I used coconut sugar)

First, I placed the ripe bananas into a bowl and mashed them up into a smooth consistency.

Then, I added in the other ingredients (egg, baking powder, flour, sugar, chocolate chips and butter) into the bowl and mixed up until all the dry ingredients are moist.

I then scooped the mixture into a small bread pan and baked at 350 degrees for 40 minutes.

Let me tell you,I’m eating some now and it is moist and delicious! I’ve probably made banana bread about 50 times but this has to be one of the best recipes I’ve tried. I think the chocolate chips were a great addition and gave it more of a dessert vibe, which is what I was going for! If you have any ripe bananas laying around, you have to try this!

When they came out of the oven, I cut them in half.

I then cut up the strawberries into small pieces and put to the side.

Then,  I made the homemade whipped cream by hand mixing the cream, sugar and rum together with a whisk until the mixture turned soft, like a cream.

After this, I made a layer of biscuit, strawberry, whipped cream, biscuit, strawberry, whipped cream and a biscuit on top! I also added some honey on top!

I have to say that this was one of the best recipes I’ve made so far! It definitely curbed my sweet tooth and was ssssoooooo delicious! This is a must try guys, trust me!
