Vegan Lentil Loaf

I love my sweets but when I’m craving my savory foods, I usually look for foods that are very filling and rich in nutrients so I eat less times a day and smaller portions. I basically learned to have the mindset “eat to live, don’t live to eat” so now I am way more aware of what I put in my body. This particular recipe came to mind when I was flipping through YouTube trying to find cheap, easy vegan recipes to try and I instantly became intrigued! When I think of meat loaf, I think of the ultimate “home cooked” meal. I wanted to try this as soon as possible to get some of this whipped up for next weeks’ work lunches! So without further ado, here is the recipe:


For the Loaf:
*Green lentils
*Oats
*Olive oil
*Soy sauce
*Tomato sauce
*Ground flax seed
*Celery
*Carrots
*Red onion
*Garlic
For the sauce:
*Stone ground mustard
*Apple cider vinegar
*Ketchup
*Molasses
*Coconut sugar
*Salt & pepper

  1. First, I made the sauce. I mixed together ketchup, stone ground mustard, molasses (makes it thick), coconut sugar, AVC and salt and pepper in a bowl and set aside. Tip: Add some cornstarch if sauce is too runny.
  2. Second, I boiled a pot of water and started cooking the lentils (cook for about 20-30 minutes). Then sauteed the carrots, celery, red onion and garlic in a separate pan to give it a softer texture.
  3. Third, After the lentils are cooked and veggies are sauteed, I added ½ of the lentils and the veggies to the food processor and only pulsed a couple of times. Remember, you still want a chunky texture!
  4. Then, I added the ingredients from the food processor into a bowl and also added the rest of the whole lentils, tomato sauce, oats, ground flax seed, soy sauce and salt and pepper to the mixture and mixed together evenly.
  5. Pack the mixture into a loaf pan then add ½ the sauce mixture on top.
  6. Cook the loaf for 30 minutes on high 375 degrees. After 30 minutes, take out the loaf and pour the rest of the sauce mixture on top. Cook for 10-15 more minutes.
  7. Take out of the oven and let cool
  8. Enjoy!!! 

Overall, I enjoyed this savory meal! I may have added a tad bit too much coconut sugar into the sauce mixture and made it far too sweet for my liking but you live and you learn. Next time, I will add less sugar and make it a bit less sweet! Hope you guys enjoyed this weeks’ affordable, convenient and healthy meal idea!
